An ode to Piedmont—one of our favorite regions of Italy—inspired by everything we love about the place: earthy mushrooms, creamy polenta, and Nebbiolo wine (the grape found in Barolo and Barbaresco). We braise a medley of oyster, cremini, and shiitake mushrooms with wine, shallots, and aromatics, then top it with a rich polenta made with heirloom New Jersey corn from cult Greenmarket favorite Lani’s Farm. Preheat oven to 400°. Remove plastic packaging and place dish on sheet pan. Bake for 50 minutes until heated through. Sprinkle with parmesan and place dish under broiler until polenta turns golden brown (about 5 minutes). Season to taste, garnish, and enjoy. Serves 2

Ipsa is a new kind of frozen food company started by two longtime food professionals dedicated to changing how–and what–people eat at home.

Co-founders Joshua and Micah love to cook and eat well, but like most people, they found they don’t always have the time and energy to gather exceptional ingredients and prepare delicious meals from scratch. Yet they found that most ‘convenient’ options require compromises they’d prefer not to make: takeout that’s expensive and wasteful, meal kits that spoil too fast, and prepared foods that leave you feeling...defeated.

In search of a way to put a civilized meal on the dinner table with minimal effort, they stumbled into an old friend that had been sitting there the whole time, quietly minding its own business: the freezer.

It turns out there’s no better way to preserve the things we value most in food–like taste, nutrition, and seasonality–than the humble freezer. But most of what you’ll find in the frozen aisle is mediocre at best. That’s not the freezer’s fault. Instead, it’s due to a lack of imagination and palate on the part of the (mostly giant) companies that produce the food. You have to love food to make food people love.

Ipsa wants to show that when the food that goes into it is made from top-quality ingredients treated with care and creativity, a well-stocked freezer is the very best way to get a superb meal on the table with a minimum of fuss, any night of the week.

Keep frozen until ready to eat, for best results reheat from frozen.
