The Molino Arbequina olives are harvested in mid-November with a free acidity level of less than 0.1%. This is an olive oil with delicate fruitiness, pleasant notes of parsley, green banana, and apple persist without overwhelming bitterness. Molino Arbequina EVOO has a versatility that can enhance a wide variety of dishes. While being an affordable cooking option in professional kitchens, it is also a perfect finish for delicate white fish dishes or pastries. Produced by the makers of O-Med, Molino Arbequina is a cost effective way to have high quality extra virgin from a single source grower and producer on your shelves or in your kitchen. Owned and operated by the Garcia-Casas family in Acula, Andalusia, in southern Spain, O-Med have been harvesting their own olive trees for four generations and producing extra virgin olive oil for two. In 2005 they purchased a mill in order to produce the highest quality olive oil possible by controlling each step of the process from olive groves to mill to bottle. O-Med produces early harvest EVOO in order to preserve the best organoleptic properties in the oils. As farmers, sustainability is of foremost importance to O-Med where solar power and an incinerator which burns the olive pits produce 40% of the mill’s energy needs. O-Med is a founding member of QvExtra, a seal which certifies quality level is higher than current legislative requirements.
We work year-round with small farms and makers to craft the ultimate selection of unique, delicious, and nutrient-dense food. In warmer months, that means ridiculously fresh fruits and vegetables from within a 300-mile radius of NYC. When it gets cold, we sprinkle in a few crops from our friends around the country to keep up the variety (Think amazingly juicy citrus from out west and super crisp peppers from the south!).
Regardless of where the ingredients come from, we build relationships with farms that use regenerative agricultural methods, no- or low-spray growing practices, and that harvest seasonally for peak flavor and nutritional benefit. Because we value the hard work and expertise of our farm partners, we pay them fairly. Up to 50% of every food dollar we make goes back to them. For reference, the national average remains below 15%. We also help some of our partners crop plan! Crop planning is the work farmers do ahead of each season to decide what they will grow. We commit to purchase certain crops to guarantee they find a home.
