For a simple meal, season with salt and pepper and pan sear skin side down in oil or butter. Finish in a 375 oven for 3 minutes or until opaque. Sprinkle with a squeeze of lemon. Redfish is also perfect for frying or baking and serving with a zippy chimichurri!
